Sous Vide : SIOChef Silicon Bags FirstLook

Great alternative to ZipLoc and freezer bags!!!

As sous vide is our go-to cooking technique, we go through a quite a few ziplock bags. Our friend Angelika reminded us that using less plastic is something we all should take personal responsibility for, and that it is probably better not to cook with bags that potentially can leach plastics into the food. As Angelika has a PhD in Chemistry, we decided it was best to heed her words.

While the concern about plasticizers leaking into food that’s been heated for extended periods of time is a theoretical one and there is no research on the issue, switching to silicone bags side-stepped the problem for us entirely.

Angelika’s reminder got the RainyDayKitchen folks off their butts and on to looking for a silicone alternative to the disposable zippy-locky things they had been using. They settled on the SIOChef sous vide silicone bags.

The best use of the inorganic silicon-oxygen backbone chain with organic side groups attached to the silicon atoms we have seen in a long, long time.

SIOChef bags are specially designed with a curved bottom for easy cleaning, thinner for better heat transfer, and since they are made with food grade silicone, are 100% BPA/DEHP free!

We will do a side-by-side comparison between the SIOChef and the freezer bags we’ve been using. Our guess is that the cooking time with the silicone bag may be a little longer, but trial by cooking-combat will provide the answer.

Our first test will be to see how they perform with scallops, jumbo shrimps, and some ribeye. Work, work, work…
